Everyone loves a good BBQ chicken, right? I love BBQ everything because it just tastes like summer! An easy weeknight meal to make is stir fry. Another weeknight meal is BBQ chicken. But, have you ever combined these two popular dishes to make BBQ chicken stir-fry? If not, add this to your weeknight meal plan and make this dish for your family!
An Accidental Recipe!
I had planned to make a stir-fry for dinner because I had a busy week in my research lab, had papers to write, and had a schedule to keep for my exercise. I went to the store on the weekend to buy everything I needed for the week’s meals.
The day finally came to make the chicken stir-fry. I started cutting up the broccoli, the red bell peppers, and all the other veggies into perfect, little bite-sized pieces. I started cooking the chicken and then, when I needed to add the coconut amines and all the ingredients for the sauce, I realised I forgot every single ingredient to make the actual stir fry sauce!
This meal would require a bit of improvisation
I looked in the cupboard. Nothing.
I looked in the fridge and saw a container of BBQ Sauce
I thought about all the ingredients I had been cooking so far and everything seemed to be a perfect pair to be topped with BBQ sauce and sautéed for a few more minutes. It was perfection!
How I make my BBQ chicken stir fry
I always buy chicken breasts in a large pack (mainly because its cheaper to buy in bulk and make a few chicken dishes during the week). Okay, take a few chicken breasts and cut them into bite seized pieces. I always toss the chicken in olive oil and season with salt, pepper, and paprika. Sometimes, I even throw in a bit of cayenne pepper to add a kick.
Stir-fry dishes are always great because you can choose any vegetables you want and pair it with chicken. I love doing a mix of vegetables like broccoli, bell peppers, mushrooms. The possibilities are endless. If you go to a local farmer’s market or local shop, you will know what is in season and you can change your stir-fry vegetables throughout the year to match what is in season, and help a local business owner.
One of my favourite parts of my BBQ chicken stir-fry, in my opinion, is the base of the meal. There is no rice in my recipe. I cube potatoes, season with olive oil, salt, pepper, and apple cider vinegar and then roast them. These apple cider vinegar and potatoes cubes pair so well with the BBQ chicken and vegetables.
The chicken in the dish provides a high protein meal with all the essential vitamins and minerals. Then I pair that with fresh roasted vegetables that also provide essential nutrients for the body, including things like fibre, to help have a healthy digestive tract! All of this is ready in under 30 minutes. This means after long work days, BBQ chicken stir-fry is an incredible option that takes minimal time but packed with flavour, and provides a nutritious meal for you and your family!
