What screams summer, even in the middle of winter, takes only 20 minutes to prep and cook and has all your nutritional needs in a nicely packaged dish? Grilled Chicken kabob. Every time I think about summer foods, I always think about summer cookouts, BBQs, all the pool parties we had and the food my dad made. Now, he had a signature chicken dish everyone demanded, but we also had these simple but oh so flavourful chicken kabob.
They are fun to make, especially for kids, take about 5-10 minutes to assemble, and cooked on a hot BBQ in about 10 minutes. If you have a fun day out on the beach or hiking, maybe even during the week after a busy day in the office, who knows, you can come home and cook a restaurant quality chicken kabob in 20 minutes! You can’t ask for more!

Now, with chicken kabob, the ingredients to assemble are up to your imagination, or potentially what vegetables are in season. Just because these are a classic summer dish, doesn’t mean you can’t cook it all year round. Its quite fun to cook these kabobs with season vegetables and yes, even fruit! In the winter, mix up the vegetables with artichokes, beetroot, or even broccoli!
Use your chef’s imagination!
Maybe you start with a base of chicken, red onions, and tomatoes. Now, imagine you add in a few pineapple or peach pieces with those veggies! With only changing, or adding, a piece of fruit, you transform the recipe, which means, even if you make chicken kabobs every week, they don’t have to be the same. You just have to get creative with the veggies and fruits. If you think grilled pineapple or peaches sound weird, I assure you, grilling these fruits elevates their flavour in a way that is absolutely delicious and quite special! Don’t knock it till you try it!
What’s in my base chicken kabob recipe
If you would rather play it safe with the meal, there is nothing wrong with that either! Classic vegetables paired with chicken kabobs are red onions, cherry tomatoes, bell peppers, and mushrooms. You don’t have to use all of them, of course, but all the vegetables complement the chicken and, of course, give your body extra nutrients it needs! Make sure you season all the chicken and veggies before you add them to the skewer. Once you have the skewers ready, they only take about 10 minutes to cook on a hot BBQ and your dinner is ready!
