Now, if you are like me and love Greek restaurants, you know that a lot of the Greek foods are often slow roasted over long hours in the kitchen. That’s all well and good, but not all of us have time to slow roast delicious lamb legs, cook rich beef cheeks, or herb baked chicken hours every day. At least not during the week. Just because you can’t spend hours in the kitchen each day, doesn’t mean you have to miss out on the Mediterranean style of food.
Bring the Mediterranean to you!
I make a Mediterranean chicken dish often. I love the baked chicken because it is so easy to make and it takes only 30 minutes. This means, after a long day of working in the lab, I don’t have a lot of energy left, so this one pan dish quickly became one of my favourite meals to make. Don’t think that a 30 minute, one pan dish is lacking flavour though! I pack my Mediterranean baked chicken with vegetables, topped with creamy goat cheese, and has wonderful sliced black olives mixed with baked chicken.
Now, if you don’t like olives, or someone in the family doesn’t like olives, you can try to get away with them in the dish. Because there are more flavours than just olives, the flavour of olives might not be as strong. The other thing you could do is sub out olives for capers. If you sub olives out for capers, only use about 2 Tablespoon of capers.
What’s in the Mediterranean baked chicken?
In my baked chicken dish, I add in red onions and tomatoes of course, but I also mix in delicious artichoke hearts and black olives to enhance the Mediterranean dish. I top everything with lemon juice and goat cheese and it creates a spectacular dish, full of flavour, nutrients from the chicken and veggies, and only 1 pan to clean up, all ready in under a half an hour! Now, I will say, when I cook this, I do also like to add in a bit of sparkling rose wine to the pan while everything is cooking. Not much, but just enough to elevate the flavour even more! You don’t have to do this, but it is a delightful addition to an already amazing dish!
