A chicken recipe is usually an easy meal to cook during the week. You have endless possibilities of spices and flavours because the flavour of chicken itself isn’t that strong. But sometimes, if you don’t have a plan for meals and different meats during the week, chicken, while nutritious, can seem bland, redundant, and a bit boring. Prosciutto wrapped chicken is an easy weeknight meal that tastes, looks, and smells like you spent hours preparing it. In reality, you only have to spend 30 minutes max, and you have dinner on plates, ready to serve! It calls for 5 ingredients. You don’t even have to add salt to the chicken because of the saltiness of the prosciutto. All you really have to do is coat the chicken in olive oil. You could wrap the chicken in prosciutto or you could add a bit of black pepper and garlic powder, then wrap the chicken in prosciutto! Prosciutto is a great addition to almost any recipe!

You have so many possibilities with the side dishes for prosciutto wrapped chicken. If you cook this meal during the week because its fast and easy to make, you will probably want a side dish, just as fast and as easy to prepare! When I cook prosciutto wrapped chicken, it easily pairs with a fresh spring salad with balsamic or raspberry vinaigrette dressing. If you don’t feel like salad, try pairing the prosciutto wrapped chicken with lemon and parmesan roasted asparagus or Brussel sprouts. You can even pair this with a simple roasted vegetable medley of broccoli and onion wedges.
What if I don’t have prosciutto?
If you don’t have prosciutto, or don’t like prosciutto, an easy and delicious substitute is of course bacon. Now, bacon seems to come in different flavours these days and that’s fine. When you look for a bacon to wrap around your chicken, I suggest you get a bacon that will add a flavour that makes your family clamouring for this dish. That substitute for prosciutto is maple glazed bacon. The flavour of maple syrup isn’t overwhelming, but it adds a subtle sweetness with the chicken and makes an excellent pair if you are cooking something like maple bacon Brussel sprouts!
