I was sent to Western Australia for work and sample collection for my last PhD project. This project gave me a chance to visit Perth. It also gave me a new opportunity to meet new people, eat delicious food, especially roasted bell peppers, and to see an incredible coastline. I spent the day before my research work exploring the city of Perth. I sat for a while in a café along the coastline and just listened to the ocean and crashing waves. The ocean is one of my favourite places.
When I was sitting at this café, they brought me a dish that was so simple, yet full of flavour. I knew when I got home, I had to try to make this dish! It was roasted bell peppers over a bed of warm goat cheese. The dish was the perfect meal on the beach!
After 72 hours of intensive work in Perth, I arrived back in Melbourne. All I could think about was recreating that roasted bell pepper dish. To do so, I only needed baby bell peppers, goat cheese, and a bit of salt and pepper.
This recipe is a great way to make a side dish in absolutely no time. If you have a dinner party and need a super easy, ‘Oh-So-Satisfying’ appetizer, make this. The Roasted bell peppers and goat cheese will take centre stage in no time. The roasted bell peppers make a great finger food. The goat cheese adds a nice texture. Goat cheese is also a healthy fat which help your body absorb some of the of the fat-soluble nutrients.
